Boiled Crawfish in December.

OK..first off, I set my alarm for 2:00 am to see the Lunar Eclipse. I forgot to tell Danny !! My cell phone alarm was going off and Danny asked me what that was. I said, from a heavy sleep, it was time to get up for work and he said..it's 2:00 in the morning ??  Then I remembered about the eclipse. LOL. What a trooper he is. He said let go see it. So we got up, got dressed-me in Dannys huge coat- and walked out side the hotel and saw nothing but clouds. We walked around the whole hotel looking to see if we could see it any where but it was not to be. I'm surprised nobody called the cops about 2 strangers walking around the hotel at 2:00 in the morning..like we were trying to find a way into the place.LOL At least we tried. We came back to the room and got back in our PJ's and went back to sleep.

Who knew you could eat boiled crawfish in December ??
We saw that some of the restaurants here in Lafayette were saying they have boiled crawfish so of course we just had to have some. LOL.
We went to the Gator Cove and got 2 different appertizers and 5 lbs. of boiled crawfish. The crawfish was really good but they were very small. I like they way they were boiled. Most of the restaurants that serve boiled crawfish add the seasoning on the outside to make it spicy instead of just letting them soak in the seasoned water. Most of the seasoning that they sprinkle on the outside has a bitter aftertaste. It's spicy but bitter. So they boil the crawfish in water thats not too seasoned and then how you order them, mild-spicy-extra spicy- that's when they sprinkle the seasoning on the outside. If you order extra spicy, they put a lot of the seasoning. So as you are peeling the crawfish, the spice gets on your fingers and thats how you get the spicy taste. I find Gator Cove had sprinkled a little seasoning on the outside but it was not bitter and you could tell that they did let them soak in the seasoned water.

Danny loves stuffed jalapenos so we orded some. I guess he thought they were stuffed with cheese, like they do in Houston, but this was with seafood stuffing.  They looked good when they brought them to the table. Nice and crunchy brown with a dipping sauce.
WELL...when you cut it open..it was nothing but seasoned breading with a piece of jalapeno in the middle. It did not taste good at all. The waitress asked how we liked them and I told her we did not and she said it was her favorite...I guess we just have different taste buds.LOL

The potatoes were a little bit of a different story. They were describe on the menu as fried tater with onion, bacon, jalapenos & cheese. They forgot to put the jalapenos, I think they would have been better with them. They were not that bad but they were not that good either. I think the idea was good but the bacon was not the good, thick bacon that Danny loves. I will do this next time we have some left over taters from a crawfish boil.
We did not get dessert but she brought the tray to show us what they have. They are all home made and some looked really good but some looked funny. especially the GREEN ONE...I asked her what it was and she said some kind of Cheesecake. It looked like somethink you would see on Dr. Seuss...a funnly looking green. They did not have it on the tray but they usuall have a 1/4 of a sliced whole pinapple that they put brown sugar on and then stick it under the broiler till the sugar gets crunchy and brown. They call it the Pinapple Creme Brulee. I never had it yet but we always say we are gonna try it one day. BUT the waitress said it's her favorite one...The same waitress who said the stuffed jalapenos were her favorite too. Now i'm not too sure that I want to try it now. LOL.
Look at that funny colored green cheese cake in the photo. I almost got it just to see how bad it really was.LOL.
Our family always play a GAME when we go to a buffet and they have a lot of weird looking desserts. We get a little bite of ALL of them and then we tasted them and try and find out the worst tasting one out of the group. Mom will take and bite of something and say...Kellie, taste this how bad, and of course I have to taste it just to see. Danny does not like to play that game at all. His said if me & Mom says it taste bad..thats good enough for him.LOL

They also have a stuffed gator at the Gator Cove. It's 13 feet  7 inches. 1,100 lbs and was 75 years old.
As they say on the History Channel new TV show...SWAMP PEOPLE...
That's a tree shaker....LOL
What they mean is...they hang a chicken leg on a hook from a tree limb and wait for the alligator to jump up and eat it and then the gator goes back in the water but can't get too far cause the hook is in its tummy. So when the boat comes up to get the gator, it's scared and mad and starts tugging trying to get away. As the gator does that..the tree limb shakes..the bigger the gator, the more the tree limb shakes.
So a big gator is called a tree shaker...LOL

Well, Danny went to the office here in Lafayette for a few hours and i'm packing up at the hotel. We are going to leave around 10:30 to head to the camp in Dularge,LA for the Christmas holidays. It was too windy to get too much fishing done when we were the over Thanksgiving so I'm hoping the fishing will be better this trip. We have a lot of little cold fronts coming thru right now and that brings wind, which makes the water muddy and the fish get lock jaw and do not want to bite. At least we get to get away for a few days.

Not good Chinese Buffet !!

I was sitting here in the hotel starving cause I did not go eat breakfast and was thinking where should I go eat. I did not eat even 1/2 of my small supper last night and Danny wants to try and find Boiled Crawfish for supper,,so my lunch was going to be my BIG meal for the day. LOL.
Well, Danny calls and says he is free for lunch and was gonna come a pick me up..cool !!
Well he does not have a lot of time so we go to this new chinese buffet place not too far from his office. Everytime we pass there they have a lot of cars so we think it's gonna be good..right ??
Wrong..
After I fixed my plate and went sit down, I took a bite..then another bite and realised everything kinda tasted the same, and not too good at that. LOL.
After I ate all of my green beans and broccoli-which was OK tasting- my plate looked like a whole plate of off white stuff. I was just going to eat what was in my plate but then i thought..hum.
I went back and got some more green beans & broccoli and I ate all of that and just picked at was let in my other plate.I hated leaving food but just really did not want to eat bad tasting food. I always joke I gsined all my weight by eating really good food !!
So it ended up being a healthy lunch...hehe
I got full on green beans and steamed broccoli !!

This photo is of my first plate. I ate all the broccoli and green beans and went back and got another plate of just that and did not eat too much of what was in this plate.

Back in Lafayette

We slept till 9:00 Sunday morning and then had to pack up so we could head back to Lafayette.Ate some leftover pizza for breakfast. We left at 2:30 and by the time we got to Lafayette, we were not too hungry for supper so we ended up going to Carrabba's.It was good. I had a nice drink with lemon vodka, limoncello, mint, lemon & limes and Danny had a glass of wine. They bring you a little plate with garlic & herbs chopped up fine and then pour some olive oil on top. It's so good with the warm bread..YUM.
Danny ordered a nice Italian Cobb Salad. It was cute the way they had the different things on the plate instead of all mixed up together..that way Danny could make sure he could eat all the bacon.LOL

I ordered the Antipasti Plate. It had Fried Mozzarella with a tomato dipping sauce. Bruschetta with some good roasted pepper and onions with some sun dried tomatoes in it. And the best part...Fried Calamari with the spicy italian pepper & lemon sauce. It's sooo good !!
Danny likes all the tentacles on the squid..Good, cause they had some big ones on the plate.LOL
NOW..Danny saw that some places here in Lafayette are starting to get crawfish and he wants some boiled crawfish now.So I told him I was going to try and find a restaurant that has some boiled ones for supper tonight. I saw some at Randoll's Restaurant last week but they were really small. But heck, I guess they still taste good.

How to DR up a frozen Pizza

Leaving tomorrow for Lafayette so I did not want to go to the store and buy a bunch of stuff and cook just to trow out what we don't eat so I just Dr'ed up a pizza, I have been having a craving for one so it worked out great.
I just bought a frozen pizza
I sliced up some roma tomatoes and put a little olive oil, salt & cracked balck pepper on the.

Put under the broiler for a few mins till browned.
Brown some HOT pork sausage in a pan, I like hot but you can use what ever kind you like.
Take out the sausage and add a pat of butter and thow in some mushrooms and cook till browned
Take the mushrooms out and add some chopped onions and cook for a few mins. You can add them to the pizza raw, but I like mine cooke for a few mins.
Got some olives form the olive bar at the grocer store and cup them up and then had some pickled jalapeno peppers so I used them too. You can used olives out of the jar or can too,
Follow the directions for the frozen pizza on how to heat up the oven.
I got some sliced provolone and mozzarella chesse slices from the deli-so I did not have to buy a big pack of cheese-and just tore them up and put on the pizza.
I topped the cheese with the cooked sausage and pepperoni
Topped that with the mushrooms and onions. Danny likes just pepperoni so I put the rest of the stuff on just 1/2 the pizza.
Topped that with the different olives and jalapeno peppers
Topped that with the roasted tomatoes
Bake in the oven till good and brown.
It came out so good. Now we have leftovers for breakfast tomorrow morning !!

This Blog

OK..my Daughter,Rebekah, said I should start "Blogging". Did not really know what that was but she told me that cause I am always on FaceBook and I alway take photo's of the food I cook and make photo recipes with them and because I travel so much and just HAVE to take a photo of the food i'm eating, that this would be a good place to put all that USLESS stuff.LOL.

So this whole BLOG is her fault...Blame Rebekah !!
This is a photo of Rebekah and my Son,Phillip, making Crawfish Bisque, they love to cook just like ME : )

Saturday in Houston

OK..we are home in Houston today. We went to Lafayette,LA on Tuesday and then was going to go to the camp on Friday till Jan.2 but we had to come back to Houston so Danny could go to the Dr.. So we drove back to Houston on Friday. It worked out OK cause we have a leak in our pool and they guys came by to fix it.
We had NO fresh food in the house cause I thought we would be gone for 3 weeks so I threw everything out, nothing worse than coming home after being gone for 3 weeks and find old food in the fridge or moldy bread in the pantry. We went to Lam Bo's chinese buffet for lunch and Taco Cabbana for supper. Lam Bo's I think is one of the better ones around but I was just not that hungry so I was pretty hungy by the time supper came around.I love the Taco Cabbana, kinda like a up scale Taco Bell but they do have really good tacos. I did not want to have to go to the store and by stuff and then have to throw it away again when we leave out again on Sunday.
I hope they have the leak fixed, we measured the water level in the pool and should know by tomorrw morning. Funny seeing a guy in a wet suit swimming around the pool.
